    What's your secret to stopping baked cheesecakes from cracking on top?

    Cover it up with Double Cream laced with Sugar ..... or Lemon Curd/Chocolate Topping...

    Seriously though when combining Cheese/Sugar and other ingredients don't use one of those Food Processors that go freaking nuts. If you do, pulse it slowly. If you have one of those old style Stand Mixer...use that on slow setting. I read that on the inside of the Philly Cheese Wrapper

    Leave the cheese out for at least 30 minutes to soften doesn't hurt as well. Once cut and blended a bit you can do it by hand pretty comfortably.

    Remember...my experience with baked cheesecakes totals...1....I got lucky

    But after doing the lemon curd...I want to try it again and put lemon curd on the bottom as well...double hit of that tangy good stuff would not be missed

    What Cut did you use for this? I got some Collar Butt the other day that will go into the Hot Smoker at opportunity. Also have a nice piece of Beef Brisket for another slow cook.

    The lamb was my fav.
