NK, the best eggplant dish I've had was one day in 2002 after finishing at Hong Kong GC. I got in the car with a couple of guys who worked at the course and we drove north from Fanling up close to the China border where there was this little shack by the side of the road which made the best pork and eggplant hotpot. There are a number of receipes around on the internet, traditionally using pork mince as it was a peasant dish, so if you like the Chinese style spices, rice wine, etc., it is a great meal with some rice. We still make it at home.

I'm still working on my bread to get it right. Have the focaccia down fine but the bread doesn't last beyond a day or two. Tonight is whole chicken on the rotisserie on the BBQ, one marinated in satay sauce, the other in Moroccan sauce. The rotisserie gives a great char grill flavour. Will probably have it with couscous or mash.
