    NK, the best eggplant dish I've had was one day in 2002 after finishing at Hong Kong GC. I got in the car with a couple of guys who worked at the course and we drove north from Fanling up close to the China border where there was this little shack by the side of the road which made the best pork and eggplant hotpot. There are a number of receipes around on the internet, traditionally using pork mince as it was a peasant dish, so if you like the Chinese style spices, rice wine, etc., it is a great meal with some rice. We still make it at home.

    I'm still working on my bread to get it right. Have the focaccia down fine but the bread doesn't last beyond a day or two. Tonight is whole chicken on the rotisserie on the BBQ, one marinated in satay sauce, the other in Moroccan sauce. The rotisserie gives a great char grill flavour. Will probably have it with couscous or mash.
    And the mayor announced from Thursday on should not be shat into the creek anymore, because on Saturday beer is brewed.

    Getting right into cooking for a second hobby. Thought i'd be totally hopeless but have cooked some decent stuff including beef wellingtons, gourmet sausage rolls, chicken wellingtons, devilled sausages, sticky lemon chicken, gourmet lasagne etc etc etc. Have a Ramsay version cooling now.

    I am actually looking at getting back into cooking professionally...

    More like 'private' cooking lessons and single themed nights. Aimed at small groups of ladies at 'their' houses.

    Initially I am thinking of offering some basic cookery classes (3 or 4 lessons over weeks or months) PLUS single 'meal included' theme nights based on countries. Seems I will offer 4-5 start up theme nights (Italian, French, Thai, Spanish & maybe Indian) with a choice of about 10 recipes. I will then turn up with the ingredients for the ONE chosen meal for the specified number and then cook / teach. They will get handouts on the country they have chosen, a basic 'must have' ingredient list, the 10 recipes of choice etc etc.

    The cookery class side of it will be more like basic knife skills, principles & methods of cooking, prep, 'Must Have...' pantry & fridge lists and the like. Week 4 would be more of a challenge like find TWO meals in a pantry/fridge where we are based for the night. Each person would have to look & formulate those TWO meals based on what they see. I go last, and then pull the stuff out and cook a quick meal for them.

    A couple of months researching, writing and planning...then hopefully get a small website up and running and start leveraging friends' friends. The good thing is that I will be able to control how much I work, while keeping the golf thing going during the work week. Actually looking forward to it!

    My dad and stepmother have one, wonder if it is sitting on the bench gathering dust these days. will find out soon.

    Saturday is roast day. Picked up a piece of wagyu topside roast today at the Brisbane Markets for $10.99 on special. The marbling looks amazing. Thinking something with mustard as a crust before roasting, either slow in the le creuest in the oven or under the hood on the BBQ.

    The butcher there also had Cooper Sparkling Ale sausages. Not sure what they'll be like but bought a pack to give them a go.

    This week's culinary trial was a Seafood Chowder that went down a treat. I am cooking up another batch tonight to freeze and provide some easy to prepare meals over the cooler months. I am also going to cook up a Salmon Chowder with fresh Aussie Salmon, just for a little variety.

    I also bought some nice green Banana Prawns and some Chorizo and I am looking at options; Gumbo? Paella or Rice? Garlic Prawns and Chorizo? Pasta?

    We have really flaky power circuits but has not been a problem. However, I can imagine that it has a huge power draw.

    The Thermomix is da bomb! Does absolutely EVERYTHING.

    However, being a chef I know how to do it the hard way. (No, I don't have one)

    For me I love cooking but thermomix (tmix) id fast.

    I buy wheat - yep a bag of it - grind it into flour add yeast - there's pizza bases/bread or rolls!

    Throw in a pumkin roughly chopped (leave peel on and seeds in) pumkin soup in 20 minutes!!

    Cleans itself in seconds. Recipes are dead easy.

    I was skeptical - went to 2 demo nights. Sold!

    Bonus is we are not eating fatty foods.
