I have been carrying a 21* and 24* Ping G10 hybrid for quite a while now but finding as the swing speed has continued to drop that even the 21* comes out a little low for me now and have considered just going from 5 wood (18.5* G10) straight to the 24*.

Is this too much of a gap or am I better off with a 22* or 23* hybrid that would cover both.

The gap you should care about is the one between how far you hit each of them. Would you hit a 18* wood higher than a 21*hybrid? 7 wood might be your answer.

I have a 30m gap in between the 5 wood and 24* hybrid, in which a 7 wood fill in nicely.

A 18*5w/23*4h/26*5i works well for me.

The 20* hybrid didn't go any further than the 23*, so I've given up on tuning a bag based on the stamped numbers. (Don't get me started on gap wedges.)

I have a G15 7w, but found it quite low-launching, compared to the VSteel 5w and Cobra hybrid. (You are welcome to try it, but it is currently with the ACT mob and I won't be down there until mid-March.)

PL, aren't hybrids supposed to be higher launching than fairway woods? I have the same hybrid & it launches nice & high. I think the answer to your dilemma with the 21 degree might be in the shaft. Perhaps dropping back in flex might assist?

i find i hit my 18 degree 5 wood much higher than my 21 degree hybrid.... and into the wind - forget it..... i hit the hybrid further!

No. Fairway woods launch higher than hybrids and hybrids launch higher than irons. The deeper the centre of gravity, the greater the effective loft and the higher the launch.

Hybrids probably hit higher than Fairway woods cos most of them have more loft :-)
